We are in awe that we have this coffee to drink, let alone to be able to roast and serve it to you. It is by far the most special coffee we have ever tasted and roasted, and this one is a full out experience. A competition coffee. One of those cups you just wish would never end. The tasting notes in this coffee are really strong and prominent floral notes, juicy raspberries with a sweet bubblegum-like taste to it.
It comes from the award winning farm Don Benjie, and we’re honored to be 1 of only 2 roasters to serve this coffee in the US!
Originally discovered in Ethiopia, the Gesha variety is often synonymous with rare, special, and pricey (with some Panama Gesha selling for over $1k per lb!!) It’s a low-producing variety that also requires highly intricate cultivating care. “What Geisha needed was a chance, and the perfect mix of conditions, including Boquete Panama’s soil, an ideal elevation range between approximately 1,500 and 1,750 meters, and all the other just-right factors which add up to a specific region’s terroir. The microclimates in Boquete are just incredible, and the volcanic soil is amazing for growing coffee,” says Stefan Muller of Don Benjie.
What makes this coffee even more special is the processing method it goes through. An ASD carbonic natural process – generally used with wine where whole grapes are fermented in a sealed tank prior to crushing. In this process with coffee, the cherry is picked and sorted for ripeness, and then placed inside of a sealed air tight tank with the cherry still intact (instead of being depulped first). The cherries are then left in the tank to ferment while highly nuanced and deep complex flavors develop.
